Is Çamlıca Hill worth visiting for sunset in Istanbul?

Yes, if you're already on the Asian side or don't mind a taxi, and no if you're short on time and stuck in European-side traffic. Çamlıca Tepesi is the highest point in the city and gives you a full panorama across the Bosphorus back toward the old city, which is why it's the classic sunset answer.
